Ingredients
  

For the Cake:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 3/4 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

For the Oatmeal Streusel Topping:

  • 1/2 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  • In a medium bowl, prepare the streusel topping by combining rolled oats, flour, brown sugar, cinnamon, and salt. Add melted butter and mix until the mixture resembles coarse crumbs. Set aside.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Gradually add the dry ingredients to the creamed mixture, alternating with milk, beginning and ending with the dry ingredients. Mix until just combined.
  • Pour the batter into the prepared baking pan, spreading it evenly.
  • Sprinkle the oatmeal streusel topping evenly over the batter.
  • Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan on a wire rack before serving.
