Ingredients
  

Seafood Filling

  • 1 tbsp olive oil
  • 1 cup shrimp cooked and chopped
  • 1 cup crab meat imitation or real
  • 1/2 cup onion finely chopped
  • 1 clove garlic minced

Cheese Sauce

  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • 1 cup cheddar cheese shredded

Assembly

  • 6 flour tortillas medium size
  • chopped cilantro for garnish

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Heat olive oil in a pan, sauté onion and garlic until soft. Add shrimp and crab meat, cook for 2–3 minutes.
  • In a saucepan, melt butter, whisk in flour and cook for 1 minute. Slowly add milk, stirring until thickened. Add cheese and stir until melted.
  • Place seafood filling in tortillas, roll them up and place in a greased baking dish.
  • Pour cheese sauce over enchiladas. Bake for 20–25 minutes until bubbly and golden.
  • Garnish with chopped cilantro and serve warm.

Notes

You can substitute the seafood with just shrimp or crab. For added spice, mix chopped jalapeños into the filling.
