Ingredients
  

  • 1 cup mashed ripe bananas about 2 large bananas
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup chopped walnuts or pecans optional

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  • In a large bowl, whisk together the mashed bananas, pumpkin puree, eggs, vegetable oil, granulated sugar, and vanilla extract until well combined.
  • In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, ground nutmeg, and ground cloves.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid overmixing.
  • If using, fold in the chopped nuts.
  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  • Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Add Moisture – Mix in 2 tbsp Greek yogurt or sour cream for a softer, richer loaf.
  • Adjust Sweetness – Use ¾ cup sugar or half brown sugar for a balanced taste.
  • Boost Spice – Increase cinnamon to 1 ½ tsp and add ¼ tsp ginger for depth.
