Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 fresh pineapple cored and cut into chunks
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 medium yellow onion thinly sliced
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1/2 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Season the chicken breasts with salt and pepper on both sides.
  • In a large skillet, heat olive oil over medium heat. Sauté the onion, garlic, and ginger until softened and fragrant, about 3-4 minutes.
  • Add the chopped bell peppers and cook for an additional 2 minutes.
  • Stir in the pineapple chunks, soy sauce, honey, and chicken broth. Allow the mixture to simmer for 3-4 minutes so the flavors meld.
  • Arrange the seasoned chicken breasts in a casserole dish and pour the pineapple mixture evenly over the top.
  • Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for another 5-10 minutes until the chicken is fully cooked and slightly caramelized.
